Fruity Choc Chip Muesli Bars

Commercial varieties of muesli bars have a tendency to be loaded with sugar, additives and not a whole lot of whole food goodness! This recipe for muesli bars is super quick to throw together and quite versatile in terms of the fact that you can throw in all kinds of ingredients into it, depending on what you have in your pantry. These bars make a wonderful snack and are also great for lunchboxes.

Ingredients:

  • 1 & 1/2 cups rolled oats

  • 4 tbsp seeds (eg chia seeds, flax seeds, hemp seeds, pumpkin seeds, sunflower seeds)

  • 1 tbsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1/2 cup dried fruit (if you are using large pieces, cut them up into small pieces)

  • 1/2 cup dark choc chips

  • 1/2 cup filtered water

  • 1 egg

  • 1 banana, peeled and mashed

  • 4 tbsp honey

  • 2 tbsp tahini paste

  • 2 tsp vanilla extract

  • 50g butter, melted

Method:

  1. Preheat oven to 180 degrees C. Line a square baking tin with baking paper.

  2. In a large bowl, mix together the oats, seeds, spices, dried fruit and choc chips. Add the water and set aside.

  3. In a smaller bowl, mix together the mashed banana, egg, melted butter, honey, tahini and vanilla.

  4. Add the mixed wet ingredients to the oat mixture in the large bowl and mix to combine.

  5. Press the mixture down into the prepared baking tin. Bake for around 20 minutes or until golden on top.

  6. Allow the cooked slice to cool for around 10 minutes and then cut into bars/squares while still warm in the tin.

  7. Allow the bars to cool to room temperature and then store in the fridge. The bars become firmer as they cool.
