Choc Orange Oats

Winter is upon us, and I am craving warming foods! I really love making oat porridge, particularly in the colder months, as a warming and nourishing breakfast. And these choc orange oats tick all the boxes. Oats are a source of beta-glucans, which are a prebiotic fibre and support digestive health, immune function and also cardiovascular health. Oats are also a great source of several B vitamins, magnesium, phosphorus, manganese, selenium and zinc, as well as various amino acids. They really are a superfood!

Ingredients:

  • 2 cups rolled oats, soaked in 2 cups of filtered water for at least 1 hour (I soaked mine overnight)

  • 1 & 1/2 cups milk of choice

  • Zest and juice of 1 orange

  • 20g butter (or coconut oil for a vegan option)

  • 2 heaped tbsp cacao/cocoa powder

  • 1 tsp vanilla extract

Method:

  1. Add the soaked oats into a medium sized pot on a medium heat (no need to drain the oats, they will have soaked up all the water anyway)

  2. Add the milk, orange zest and juice, butter and cacao powder. Stir continually for a few minutes until the mixture starts to thicken. Add a little more liquid if you feel the mixture needs it.

  3. Stir in the vanilla extract and take the pot off the heat. Enjoy!
