Pizza… on a Quinoa Base
Quinoa is pretty versatile - it is actually a seed (not a grain) that is a nutritious powerhouse. It is a great source of many nutrients including fibre, folate and other B vitamins, vitamin E, manganese, magnesium, phosphorus, selenium, zinc and potassium. So there are plenty of reasons to include these little seeds into your diet on regular rotation. This pizza base needs to be baked on its own first, then with the toppings on your choice. It makes a delicious weekend lunch and is very filling. I hope you enjoy it!
Ingredients (serves 2):
150g quinoa flour
1 tbsp chia seeds
2 tsp salt
1 tsp garlic powder
1 tsp onion powder
2 tsp dried herbs - eg oregano, basil, parsley, dill, rosemary
125ml water
Olive oil
Toppings of your choice - we used tomato paste, diced capsicum, diced onion, sliced Brussels sprouts, sliced chorizo, grated parmesan
Method:
Preheat oven to 200 degrees C and line a pizza tray with baking paper or a baking mat.
In a large bowl, mix together the quinoa flour, chia seeds, salt, garlic powder, onion powder, herbs and water. Stir together until combined.
Tip the mixture onto your prepared baking tray, and using wet hands shape the mixture into a rectangle or circle, depending on the shape of your baking tray. You want to end up with a base that is approximately 1-2cm thick.
Drizzle the base with olive oil, and then bake for around 10 minutes or until mostly cooked through and a little golden.
Carefully remove the pizza base from the oven and add the toppings of your choice. Pop back into the oven for another 10 minutes or until the toppings are cooked through.
