Strawberry & Coconut Custard

Have you ever made your own custard? Those with a Thermomix almost certainly would have at one time or another. Though even without a Thermomix, it is pretty easy to make your own custard. This recipe makes around 1L of custard. My kids love this recipe, and I hope you like it too!

Ingredients (makes approx 1L):

  • 250g strawberries, washed and hulled (puree them if not using a Thermomix)

  • 400ml coconut cream

  • 200ml water

  • 1/2 cup maple syrup

  • 2 eggs

  • 1 tsp vanilla extract

  • 2 tbsp corn flour

Method:

Stovetop: Dissolve the cornflour in a little water and pop all the ingredients into a saucepan on low heat, whisking constantly for a few minutes until the mixture thickens a little. The custard will thicken more as it cools.

Thermomix: Add strawberries and pulse a couple of times to chop. Add remaining ingredients and cook for 7min/90deg/sp4.
